Aloha everyone! This week I wanted to talk about a couple of my favorite Hawaiian food recipes. The two recipes I’m featuring this week have quickly become staples in my household for very important reasons. First, I have most of the ingredients needed to make these two dishes which makes them an inexpensive meal for my family. Second, depending on how many people I’m cooking for I can adjust the recipe. Third, I can prep both dishes up to a few days in advance. Last, both recipes are so delicious that even my kids chow down!!!
The first recipe is a Huli Huli Chicken. I remember first trying this dish at a local restaurant and thinkingto myself, “I desperately need to get my hands on this recipe”. I found a recipe and to my surprise I had most ingredients stocked in my pantry. The only thing I had to go out and buy was the chicken. I personally love to use chicken thighs for this recipe. I find that the skin on the thighs adds an extra crispiness I really enjoy. Click Here.
The second recipe is a Potato Mac Salad. One of the first meals we had was from a food truck in North Shore and they served their chicken plate with a side of potato mac salad and I thought I’d died and gone to Heaven. It was that good! I naturally became fixated on finding a recipe so I could replicate this side dish at home and luckily found one that all my friends rave about. The only adjustment I make to the recipe is that I double the amount of elbow pasta. Go Here.
